Overwintering is a temperature-management problem before it is a product category. Decide whether plants should be dormant, merely frost-protected or actively growing, then choose the greenhouse and systems around that goal.
The first greenhouse-selection question is not which panel is thickest. It is what the plants need to do all winter. Some hardy perennials are intentionally kept cold and dormant. Some tender containers only need protection from freezing. Tropical plants may need to remain actively growing with much warmer air and more light.
UMass guidance for container-grown ornamentals illustrates the range. Commercial perennial overwintering can use soil temperatures around 25°F for nursery stock or roughly 30–34°F for many perennials, while another heated-house approach establishes plants warmer in fall and then maintains around 35°F through winter. Those figures are not appropriate targets for every hobby plant—they demonstrate why the plant category must come before the heater setting.

A greenhouse that is much larger than the plant collection increases exposed area and heating load. Compact can be an advantage when the purpose is storage rather than summer production.
Overwintering houses still need controllable vents. UMass recommends ventilation when winter temperatures rise because plants can de-acclimate or begin growing too early.
Allow access for watering, pest checks and removal of damaged material. Packing pots tightly improves space use but should not make the collection impossible to monitor.
UMass notes that roots of container-grown plants are less buffered from cold than roots in field soil. Illinois Extension similarly emphasizes preventing the soil mass in containers from freezing for plants that require that protection. This matters when a greenhouse owner assumes that a plant hardy outdoors in the ground is automatically safe in a pot.
For a hobby greenhouse, the practical response is to know the root-zone requirement, group plants by tolerance and place the most sensitive material away from colder perimeter zones when possible. A soil/root-zone thermometer can sometimes be more informative than looking only at an air thermostat.
Preselect the overwintering goal, then enter the actual site size and choose your heating plan yourself. The Finder does not assume that every overwintering collection needs the same winter temperature.

Penn State notes that many tropicals begin struggling when nighttime temperatures fall into the low 40s°F and that actively growing tropical houseplants need bright conditions. That is a very different project from holding hardy perennials near dormancy. A frost-protection thermostat alone cannot be assumed to keep a tropical collection healthy.

A well-sealed greenhouse reduces uncontrolled infiltration, but intentional ventilation still matters. Sunny winter days can raise the interior temperature quickly. UMass specifically recommends ventilating overwintering structures during warm spells so plants are not pushed into growth prematurely.

There is no universal overwintering temperature. Dormant perennials, frost-sensitive container plants and actively growing tropicals have very different requirements. Determine the species and whether it should remain dormant or actively growing before selecting a thermostat target.
Sometimes, for sufficiently cold-hardy material and the right local conditions, but an unheated greenhouse does not guarantee frost-free temperatures. Container roots can be more vulnerable than in-ground roots, and sunny winter days can also create overheating that requires ventilation.
A manageable heat-loss envelope, tight doors and vents, controllable ventilation, enough floor/bench room for containers, safe heating provision and access for inspection and watering are usually more important than decorative features.
Yes if the greenhouse can provide the temperature, light, humidity and pest-management conditions required by those species. Many tropicals are injured well above freezing, so a greenhouse maintained only for frost protection may still be too cold.
